In fact, we'd say bread is best when kept simple. Whole wheat bread is even better when you use the highest quality ingredients you can find.

For us, that means fresh-grinding all of our whole wheat in our stores. Just like fresh ground coffee beans make a better cup of coffee, freshly ground wheat grain makes a better tasting - and healthier - loaf of whole grain bread. For the best whole wheat bread taste, it's important to rush flour from the mill to the mixing bowl. Until you taste whole wheat bread that fresh, chances are you've never really tasted the true flavour of wheat.

As far as preservatives go, forget about it! Great Harvest whole wheat bread have never been made with preservatives or artificial additives of any kind…and they never will. Thanks to our special scratch-made process, our whole grain bread still stays fresh for up to ten days (if you can keep your hands off it that long!)

Montana farmers send our whole grain bread specialist a lot of wheat - about 50 bags of wheat a year. Our specialist tests each bag, and then decides which bags aren't up to her standards (usually about 30-40%). She's got a good eye for wheat. She has good taste buds, too. From each wheat sample she bakes loaves of bread. You don't know what kind of whole grain bread a sample of wheat will make until you bake it and find out.
