Baking fresh whole grain bread or whole wheat bread only takes five pure and simple ingredients: whole wheat flour, filtered water, fresh yeast, salt, and something sweet (usually a local honey). In fact, we'd say bread is best when kept simple. Whole wheat bread is even better when you use the highest quality ingredients you can find.
For us, that means fresh-grinding all of our whole wheat in our stores. Just like fresh ground coffee beans make a better cup of coffee, freshly ground wheat grain makes a better tasting - and healthier - loaf of whole grain bread. For the best whole wheat bread taste, it's important to rush flour from the mill to the mixing bowl. Until you taste whole wheat bread that fresh, chances are you've never really tasted the true flavour of wheat. As far as preservatives go, forget about it! Great Harvest whole wheat bread have never been made with preservatives or artificial additives of any kind…and they never will.
